Not Yo Momma’s Lasagna!!!…a Freezer Meal Friday recipe
What is your comfort food? What is your soul food? Mine is Italian food. Ohhhhh, I love pasta, in many forms! And Pasta loves me…I kind of have a pasta stomach. You know, that little pooch from all of those carbs??? Yep, that’s me. At this point in my life, I need to decide…do I want a svelte body and give up all white foods and carbs? Or do I want to savor some good, tasty food, because..well…I’ve tried to be good for a long time, and I’m maybe just going to accept my weight and try to eat healthily for the most part. Lasagna is my treat. It’s also great to feed a crowd, take to a pot-luck, and makes a great freezer meal.
I’ve played around with lasagna recipes for a long time. This is one that I’ve created. No, it doesn’t have eggs. Yes, I really prefer cottage cheese in mine instead of ricotta cheese. Feel free to use turkey instead of ground beef. But the best thing is that I use Oven Ready Lasagna noodles, and don’t have to cook them first. Here’s the recipe. Enjoy! Chicken Enchiladas—Freezer Meal Friday
My family loves to eat Mexican food. Chicken Enchiladas is one of our family favorites. It’s simple to make, and I usually make extra because they freeze so well. It’s so great to be able to pull something out of the freezer the night before, and let it thaw overnight, and cook it for dinner the next night. The Main Street Arts Festival is coming up in Ft. Worth!
April 19th – 22nd.
Downtown, Ft. Worth
This is a juried Arts Festival, with wonderful creations of many types. There will also be a big food court area, and four stages for musical artists to perform.
I’ll be looking for a new head for my collection. What will you be looking for?
A Road Trip to Abbott, Texas
I like to take small road trips to towns in my area. On Palm Sunday, my husband, Dick, and I went to Abbott, Texas. Abbott is a very small town, but has a lot of history. A number of businesses have been closed up, but they have a police department, fire department, city hall, several churches and a big school. Abbott is the childhood home of Willy Nelson.
We first went to Abbott when we moved to Ft. Worth in 2003. My dad’s cousin, Stubby, lived in Hillsboro. Hillsboro is just a hop, skip and a jump from Abbott. We called Stubby and said we wanted to see a cotton field…could he take us to one? Sure. So he took us to a field, and then on to Abbott. He had spent a lot of time there, when he was growing up. He described how it had been a pretty hopping town, when he was young, due to being a stop on the railroad. Then I-35 was built, and Abbott gradually got smaller. Currently, Abbott has a population of about 375 people. I looked up the statistics, and it said that about 75% of the population is between 30 and 55 years of age. That makes it a nice place to live, and drivable to Hillsboro, Ft. Worth and Waco for jobs. The homes were well-kept. Continue reading “A Road Trip to Abbott, Texas”
